* Tasty egg casserole: Mix lightly beaten eggs, 1/3 cup all purpose flour and a ¾ teaspoon of baking powder together. Now add lean pork breakfast sausages that are fried and crumbled, into the eggs. Now add grated cheese and sliced mushrooms to the egg mixture and beat well. Now pour this mixture to a greased casserole and it in a preheated oven at 375 F for 30-35 minutes. This delicious egg casserole yields 4-5 generous servings.

* Hash brown and egg casserole: This is an absolutely delightful recipe for breakfast and I bet your kids will simple love it. Beat 12 eggs, a cup of plain yogurt and salt to taste. Melt some butter or margarine and sauté chopped onions. Add shredded hash brown potatoes (thawed) and mix well. Now pour in egg mixture and lightly stir to blend all the ingredients. Pour this into a greased casserole dish and sprinkle grated cheese on top. Bake at 350 degrees for about 25 minutes. Insert knife to check if it is fully done. If the knife comes out clean it means the casserole is ready to be served. You can cut them into squares pieces and serve. This makes a very healthy breakfast casserole, especially for children.

* Overnight egg casserole: Now this casserole is very easy to prepare and the best part is that you can make it overnight and just bake it the next morning. It’s a perfect breakfast casserole recipe for the busy mom’s. Crumble sausages and fry them in a skillet. Drain well. Now spread bread cubes on the bottom of a greased casserole. Top this with sausages and cheese. Beat eggs, milk, salt and dry mustard. Cover tightly and refrigerate overnight. Bake at 350 degrees for 30-40 minutes.
